Bavarian Apple Torte

Crust
1/2 cup butter
1/4 teaspoon vanilla extract
1/4 cup honey
1 cup all-purpose flour

Cream butter, honey and vanilla extract. Blend into flour, pat into greased 9-inch springform pan (bottom and up sides enough to accommodate filling and topping).

Filling
8 ounces cream cheese
1/4 cup honey
1/2 teaspoon vanilla extract

Combine cheese and honey; mix well; add egg and vanilla extract; mix and pour into pastry lined pan.

Topping
4 cups Golden Delicious apples,
    peeled and thinly sliced
1/4 cup almonds, coarsely chopped
1/2 teaspoon cinnamon
1/3 cup honey

Place sliced apples on top of the filling (in circular pattern) sprinkle with almonds, and cinnamon and drizzle with honey as uniformly as possible.

Bake for 10 minutes at 425 degrees F. Reduce oven temperature to 400 degrees F, and bake for approximately 25 minutes more. Cool and refrigerate.

  • 1 cup slivered almonds
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup raspberry vinegar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 cup vegetable oil
  • 1 head romaine lettuce, torn
  • 1 pint fresh strawberries, sliced
  • 1 cup crumbled feta cheese

DIRECTIONS

  1. In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
  2. In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
  3. In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.
